4. For crispy edges on your fried chicken slowly drizzle a 1/2 cup of batter over your flour and toss it in with a fork to coat. Then follow the procedure for breading the chicken below. This creates those super crunchy bits!

To Bread the Chicken:

1. Set chicken on the counter, next to that set your flour and then your batter.

2. Take the chicken breasts and toss them in the flour mixture, dip in the batter and then place them back in the flour.

3. Push the mixture into the chicken making sure the chicken in thoroughly coated, this will help you achieve the crust and crunch you are looking for.

Repeat this process with the remaining chicken.

4. Fry the chicken for about 15 minutes, turning occasionally until the chicken reaches an internal temperature of 165 degrees.

Prepare Spicy Pimento Cheese:

1. Place cheeses in the bowl of a stand mixer, using the paddle attachment mix cheeses until they start to breakdown and mix thoroughly with each other.

2. Add garlic, Dijon mustard, mayonnaise and sour cream and mix at medium low speed for 30 seconds.

3. Scrape down the bowl and add the scallions and roasted red peppers. Mix on medium low speed for 30 seconds.

4. Taste and season with Salt & Pepper.

1. Top your chicken breast with a generous amount of Spicy Pimento Cheese and place under the broiler until melted.

2. Place red onion and pickles on the bottom bun. Place with the melted pimento topped chicken on top of the pickles.

3. Add top bun and enjoy!
